Chewy Chocolate Cookies with White Chocolate Chips and Junior Mints

I am so excited about this post because this is the first recipe I have developed! To add to that excitement, they actually turned out really well. These cookies are moist, puffy, fudgy, and chewy. They have white chocolate chips and Junior Mints stuffed inside, and as the bake the Junior Mints guts ooze out here and there… Yum!

The white chocolate chips and Junior Mints work really well in this fudgy cookie. The minty goo is absorbed into the cookie while it bakes, so you get extra dark chocolate flavors and a nice subtle mint flavor with each bite. The white chocolate also helps to elevate the cocoa and dark chocolate flavors.  I added dark brown sugar to the recipe to give the cookies moisture and depth of flavor. This recipe also calls for cornstarch – you definitely will want to add it because cornstarch gives the cookies their extra height. I would recommend refrigerating the cookie dough for at least 30 minutes before baking if time allows. Chilling the dough will help the cookies not to spread out on the cookie sheet and they will turn out nice, round, and fat.

Chewy Chocolate Cookies with White Chocolate Chips and Junior Mints

Ingredients

1 cup butter, softened

1 ¼ cups white sugar

¾ cup dark brown sugar

2 eggs

2 tsp vanilla

2 cups flour

¾ cup unsweetened cocoa powder

1 tsp baking soda

2 tsp corn starch

½ tsp salt

1/8 teaspoon instant coffee granules

1 cup white chocolate chips

1 cup junior mints

Directions

Cream butter and sugars until fluffy.

Beat in eggs one at a time. Add vanilla.

Combine flour, cocoa powder, baking soda, corn starch, salt, and coffee granules in a separate bowl.

Slowly add dry ingredients to wet ingredients. Add white chocolate chips and junior mints into the dough and carefully stir to combine.

{I would recommend here that you refrigerate cookie dough for at least 30 minutes.}

Drop balls of doug onto a cookie sheet lined with parchment paper or a Silpat. Bake a 350 for 8-9 minutes. Cookies will appear slightly undercooked , but you should remove them from the oven. Allow cookies to cool on the pan for 5 minutes and then transfer to wire racks.
