Caramel Apple Coffee Cake

 Ahhhhh, fall. I love, love, love this season. Crisp air, campfires, snuggly sweaters, pumpkins, and of course all of the delicious fall treats! I love the flavors of apples, cinnamon, pumpkin, maple, and nutmeg. Warm spices that are rich and comforting. As much as I love rich chocolate desserts or bright citrus flavors, I think the flavors of the fall are my very favorite. Fall is a season of change, of anticipation, and of celebration.


I made this caramel apple cake for a labor day weekend dinner with friends. Initially I called the dessert “bars,” but it came out with a texture and a flavor reminiscent of coffee cake. Indeed, have enjoyed the leftovers with my morning coffee the last few days, and the bitterness of the coffee has balanced the sweetness and warmth of the cake. Of course, it makes an excellent dessert for your evening meals as well!


In addition to being delicious, this recipe cake together super quick – I was just getting it in the pan when the oven had preheated! I love that. And, it only requires one bowl. I used pre-made apple pie filling and caramel for this cake, so it was super convenient as well. Of course, if you are so inclined, home made versions of apple filling and/or caramel would take it to a whole other level! And, as always, I would be remiss if I didn’t tell you that this recipe was inspired by this recipe.



Caramel Apple Cake


1 cup butter, softened

2 cups sugar

4 eggs

1 teaspoon vanilla extract

3 cups all-purpose flour

1 teaspoon salt

½ teaspoon cinnamon

1 can (21 oz) cinnamon-spice apple pie filling

Caramel ice cream topping


Preheat oven to 350°.

Line a 13” x 9” x 2” pan with parchment paper and spray with cooking spray. Set aside.

Cream butter and sugar in stand in a mixer. Add eggs and vanilla. Add flour, salt, and cinnamon.

Spread three quarters of the dough in to the prepared pan.  On top of the dough, add apple pie filling, spreading evenly. Top with remaining dough by dropping dough onto the apples intermittently.

Bake 35-45 minutes, until a tooth pick comes out clean and the edges are golden brown.

Allow to cool completely, and drizzle with caramel and dust with cinnamon.
